Add 3 big handfuls of kosher salt to a large pot of water and bring to a boil. You're probably tired of us saying it all the time, but, yeah: Salting your pasta water generously is the key to well-seasoned pasta, period. Drop 1 lb. Set a timer according to package directions for al dente. Cut 1 stick chilled unsalted butter into 8 pieces. While pasta is cooking, heat 2 Tbsp.

The secret ingredient is sweet-and-spicy peppadew peppers. The components can be prepped ahead of time, assembled, and baked 20 minutes before serving. The recipe is easily doubled or tripled for a crowd and perfect for a Superbowl gathering.

Happy Mac n Cheese Day! We love mac n cheese around here — from the classic Kraft blue box to the most upscale restaurant variation. The dish we made tonight falls somewhere in the middle. The pasta did come from a box — sorry, way too hot and pregnant to make my own pasta tonight — but cacio e pepe always seems a little fancier than American mac n cheese, just by virtue of its non-English name! In reality, Cacio e pepe is just as simple and homey to Italians as our American mac n cheese is to us, but we can always pretend to be fancy! This variation adds corn for a sweet, summery update. Happy with the result and the saving of a few calories.

Melt 2 Tbsp. Drain pasta; let cool while you make the sauce. Bring milk to a bare simmer in a small saucepan; keep warm. Melt remaining 2 Tbsp. Add onion and garlic and cook, stirring, until onions are fragrant and beginning to soften, about 2 minutes.

Simmer milk, cream, mustard powder, and cayenne in a medium pot over medium heat, stirring and being careful not to let mixture boil, until heated through and well combined, 6—8 minutes. Mix cornstarch and 2 Tbsp. Bring to a boil and cook, whisking constantly, until mixture thickens, 1—2 minutes. Add cream cheese and cook, whisking occasionally, until mixture is smooth and thick, 2—3 minutes. Reduce heat to medium-low and gradually stir in cheddar, muenster, and Fontina, if using. Meanwhile, cook pasta in a large pot of boiling salted water, stirring occasionally, until al dente. Drain and stir into cheese mixture.
